There are plenty of great places for you to stay during your Fez vacation. The ancient heart of the city is the medina; you enter this neighborhood through the stunning tiled Bab Bou Jeloud gate and can explore the winding streets and alleys for hours. In the Fez el-Jdid neighborhood you can browse through the dozens of tiny markets and vendor stalls and haggle with craftsmen over the prices of goods they’ve been making in much the same way as they did 500 years ago. The French Ville Nouvelle quarter has a distinctly European feel to it with its wide boulevards and squares lined with open-air cafes.

The fourteenth-century Madrasa Bou Inania is a stunning example of Islamic architecture. As you wander through the sunlit courtyards and stare up and the mosaic-covered arches and minaret, you’ll feel transported back into the days of the sultans.
In fact, this entire walled city seems as though it were frozen in time. Most of the buildings in Fez’s center date from the 13th and 14th centuries, and the absence of cars only adds to the sensation you’ve leapt back in history a few centuries. You’ll have to dodge pack animals with their wares as you traverse the city’s cobblestone paths, most of them headed to the many open-air bazaars that seem to have changed little over the course of Fez’s nearly 1300 years of history. The Chouara and Sidi Moussa tanneries have been practicing their trade since the Middle Ages, and you can watch the heirs of this medieval business ply their craft from the overlooking terraces.
The University of al-Karaouine claims to be the oldest on the planet, and its physical beauty make it a must-see on your Fez vacation. The school has been in continual operation since 859, when it was first founded as a mosque. Its seemingly endless sea of arches, stunning tiled courtyards with their gushing fountains, and beautiful paintings will make you wish you were a student there yourself.
Before you leave make sure you climb up to one of the rooftop terraces in the old city and watch the sun sink below the horizon, bathing the stunning ancient capital in an orange glow.
